Aroma & Taste
A rich and concentrated Sauvignon Blanc the barrique fermentation adds texture alongside delicious grapefruit and ginger flavours.
Viticultural Practices
The grapes are grown on well drained gravel soils. All vines are grafted onto 3309 rootstock which limits crop and enhances flavour intensity. Vines were managed at a low crop level to specifically produce this wine. Frank cut the cordon on the grapes before harvest to shrivel the grapes and produce a wine of intense concentration.
Wine Making Details
Just 94 cases were made of this rare Waipara Valley example. Juice was pressed straight to barrel where it underwent a wild yeast fermentation. The wine was matured on yeast lees for 3 months with occasional stirring to enhance body and mouth feel and then aged in barrel for over a year. .
Food & Wine Matching
The good levels of acidity and hint of citrus mean the wine would pair well with oily fish such as salmon or seafood. But the depth of flavour mean you could consider roasted chicken or pork. The slight creaminess would match goats cheese or ripened brie. Perfect with a goats cheese tart
