Viticultural Practices
The vines are 15 years old and planted on well-drained sandy gravels. Two different clones 2/15 and Lincoln Berry Smith add complexity to the wines.
Wine Making Details
The grapes were machine harvested, pressed to tank and cold-settled. Clear juice was racked off and then inoculated with selected yeast strains. Fermentation was in stainless steel with cooling control for a fruit driven style. Fermentation was stopped early to leave some residual sugar (10g). The wine spent four months on yeast lees before blending.
This wine is perfectly paired with pork or roasted white meats. The ginger finish means it would also pair well with Asian dishes.
